Utrechter wins WK fries bins in France: 'Daring, tasty and light'

The Utrecht Frietbakker Siem van Bruggen has been crowned the best chip shop in the world in France. He convinced the jury in the center of Arras with the “bold way” of fries boxes and the “light taste”.

Van Bruggen had not seen the profit coming in advance. “In France it is still common to fry fries in cattle fat,” he tells NU.nl. “I am for vegetable food and so use vegetable fat. In the Netherlands that is very common.” Moreover, a manufacturer of beef fat was a sponsor of the world championship.

The Frietbakker participated in the ‘authentic fries’ category, the main part of the event. This only concerned the fries itself, without toppings. He defeated competitors from all over the world. There were of course participants from France and Belgium, but a Japanese also participated.

On a stage on the Grand’place of the French city of Arras, the participants showed how they made their fries. They were assessed on many different points; From the kind of potato to the way of frying.

The jury found the fries of Van Bruggen “daring, tasteful and light”. By the latter, the jury meant that the fries is not too heavy on the stomach.

Van Bruggen started more than ten years ago under the name Dapp with a fries bike. He then opened two stores in Utrecht and Leiden.
